gluten free lentil patties

Ingredients

  • 4 tsp olive oil
  • 1 medium onion
  • 1 index finger lenght leek
  • 20 grams red lentils
  • 20 grams quinoa
  • 20 grams black beans
  • 1 small potato
  • 1 tsp paprika powder
  • 1 tsp veggie broth
  • 1/4 cup buckwheat flour
  • 1/4 cup oats

Instructions

  1. peel the onion & potato and cut them into small cubes. also cut the leek into thin slices

  2. heat 1 tsp of the oil in a pot. once hot add onion, leek, paprika powder and veggie broth. let them roast until soft

  3. then add lentils, quinoa and potato. add enough water so slightly it's covered (let it cook for 10-15 minutes, until water is gone and it's soft)

  4. add the black beans from a can, 2 tsp of oil, buckwheat flour and oats. mix with your hands until a well combined dough

  5. form a pattie (or a few, depending on how thick and big or thin and small you want it) with your hands

  6. heat the remaining tsp of olive oil in a sauce pan. once hot, place the pattie inside and roast on each side for 2 minutes on medium heat until golden brown

enjoy with sweet potato fries, guacamolé, by itself or as a burger
