peel the sweet potato, then cut it in thin, long slices so they'll look like french fries
sprinkle the oil, salt and paprika powder on top and combine well
preheat the oven at 200°C
layer them out on a baking sheet and place them in the oven
reduce the heat to 130°C and bake them until they are soft on the inside and crispy & golden on the outside (about 30-40 minutes)
serve with guacamolé, a scoop of coconut yogurt or enjoy with a burger
