gluten free, nut free, dairy free, soy free, grain free, vegan brownies


Ingredients

  • 250 g sweet potato
  • 200 g black beans
  • 150 g dates
  • 3 Tbsp oat milk
  • 3 Tbsp coconut oil
  • 1/2 tsp vanilla
  • 70 g cacao
  • 1 tsp baking soda
  • 3 Tbsp maple syrup

Instructions

  1. peel and cut sweet potato in very small pieces. In a little bit of water, steam sweet potato cubes in a pot until soft

  2. either use pre-cooked/canned black beans or prepare them fresh according to the package

  3. combine soft sweet potato and beans and either mash them with your hands, a fork or use a blender. Continue until smooth paste.

  4. use very soft dates or soak them for a few hours. Blend them with oat milk and liquid coconut oil until they become a paste

  5. combine sweet potato - bean mixture with date paste

  6. add vanilla, cacao, baking soda and maple syrup

  7. preheat oven at 200°C

  8. place a baking sheet in a 25 x 20 cm baking form

  9. add brownie mixture to baking form

  10. bake for about 45 minutes at ~120°C

  11. cut in pieces and let it cool down a little before enjoying
